If you're actually serious just visit bodybuilding.com, t-nation, leangains, even fucking /fit/ and search for a beginner routine. Then stick to it for a while. To answer your question (although lord alone knows why) either 3 sets of 8 or 5 sets of 5 is preferable to either scheme you proposed. Modify your weight until you can do one of those. 5x5 is better for pure strength than 8x3, although the best program out there for incremental strength gains is Jim Wendler's 5/3/1. Now bugger off.
