I love noodles, in fact, they may be the only form of "food" which I could eat for breakfast, lunch and dinner. The only noodles I can't stand are SuperNoodles, which for the same price I could buy 4 or 5 decent packets of good {Thai,Chinese,Jap,*} instant noodles, even more if I got supermarket value packets.

Does /nom/ like noodles? Which kind?

I get noodles from my local ethnian food market

I have them if I can't be arsed cooking, and normally throw in some veg and a bit of pak choi if I have some - it's normally the nong shim ones I get. There's one which is called something like tokyo noodle sounp - has lots of seaweed flakes in it. Tasty stuff.

I should really start keeping in some baby octopus to go in them.

Mmm, noodles. Since I'm a freak, it's bean noodles for me. Not available with as many pre-packaged flavours, but still nice&noodly. Can't get them to replicate childhood chow mein memories, but for everything else, they do the job, and after a couple of noodle-free decades, it's good to be slurping again.

Microwave? Egad! Protip: Don't follow instructions on UK brand instant noodles.

The majority of noodles here generally contain a soup base, some oil (palm, sunflower, etc) and sometimes an additional sachet with chilli flakes.

Bring a couple of hundred ml of water to the boil in a pot (enough to half-cover the noodle block); boil the noodles for a few minutes until soft and most of the water is gone; Reduce the heat (or take the pot off the heat), add soup base while there's still enough water to mix into it, stir well, add oil, serve.

Alternatively add more water for a noodle soup, just make sure there is enough seasoning - MAMA do a Cream of Tom Yum version of the Tom Yum Noodles which makes a delicious spicy noodle soup. I generally buy from a local warehouse or order from Wing Yip online.

Great. I tried another company once (Thai owned), and they weren't very good. Wing Yip are generally excellent and with my first large-ish order I received a couple of bowls, saucers and decent chopsticks. I can't remember how much I spent though.

For my money the best instant ramen are the Japanese ones. Yes, yes, "weaboo" etc - I guarantee you that any of you would agree after a bowl of them. They have decent flavour (usually a minimum of three sachets of bits and bobs) and they actually taste distinct from one another, instead of the usual "MSG + beef/chicken stock" approach that most Chinese and Korean ramen take.

I first came into contact with them through a Japanese friend who'd brought them over with her, but I have since ordered a few times from Mount-Fuji when I was feeling flush; these are pricey, especially compared to the prices you can find for Chinese ramen, but every now and then as a treat I reckon it's worth it. I don't eat cheap ramen these days anyway, I find the amount of MSG fucking toxic.

"Best" is relative here. Original Japanese Nissin generally are the shit, I agree, but their "Top Ramen" range (which seems to be aimed at the european markets) is ... mediocre. Not bad at all, just not great either. I had a couple of random cup (well, "flying saucer", really) noodle thingies when I was in Japan which were gorgeous (weaboo etc... yadda yadda), but sod knows what they were. I don't read kanji/hiragana/katakana ('cept for パンツ... yes, I am that shallow).

Anyway, in order of preference:
1) Nissin Demae
2) YumYum

I ordered some mama from Wingyip, let's see how it goes.

Their fresh stuff is great, but note that they only get a shipment a week, so it'll take a while to get to you, depending on when you order. Packaged stuff turned up next day. Lots'o'noodles, naturally, including a better-than-usual but still small selection of bean ones for us freaks. If only I could find a source of the flavouring packets, without them being attached to blocks of inedible noodles. Mind you, 25 pence isn't huge sacrifice, for research purposes, and I'm sure I can find a home for the noodles. Hmm...

My mother "in law" was in town and we asked her to get some noodles like the last time. She asked which she should get, we said "Mama, or anything - just a selection"... She came back with a bag full of Indomie noodles; I soon realised she picked that brand because they were the only ones with English on them...

"If a job needs done well, do it yourself."

n.B. Some of the Indomie noodles aren't /too/ bad - and luckily I have a large jar of chilli and tom yum paste. The packet on the pic has 4 sachets: Soup base, chilli flakes, oil+onions and thick soy sauce so isn't terrible.

For 85p (or £1.25 at my local shop), I'd at least expect them to include oil or something else other than a sachet of generic soup base with a couple of added flavourings depending on the packet.

Morrisons, Tesco and ASDA's budget noodles can be made to taste really nice without spending too much. The noodle cakes/blocks they use are from a half-decent brand (whose name escapes me now). Soy sauce, Sesame oil, chilli oil, chilli flakes, tom yum paste, bits of stock cubes and meat etc are just a couple of cheap ingredients you could add to turn a bland snack into a nice-ish meal :P.

If I wanted to put any effort at all into it, I would grab my chilli flakes, home made chicken stock and various pantry spices and boil up some plain dried or fresh noodles, instead of using some flavouring in a packet instant noodle from Asda.

If I want something that I don't have to put any effort into, I will use the tastiest instant noodles about - the super ones, instead of buying sub-par ones and either throwing the flavouring away or trying to improve upon it - that's just daft and defeats the point.

Ever tried Udon ? That's one of the classic Japanese noodles - the other one being Soba and Somen.
They are usually available semi-fresh like in the image or just frozen.
I guess it would be impossible to cook a dried udon as they are about 5mm thick and therefore they would dissolve on the outside and still not be done on the inside.
