What are your favourite 'simple but amazing' dishes?

Moules marinere is easily mine. Just a big bag of mussels cooked in white wine, onion, and garlic. You can add other things like cream and parsely, but you really don't have to, it's delicious, and takes about twenty minutes to make, ten if the mussels are already de-bearded.

A close second would be tagliatelle with garlic, black pepper, and olive oil. Truly outstanding for what it is.

Pasta with tomato sauce. As in sauce freshly made from ripe tomatoes, not disgusting runny ketchup poured from a jar. Some onion, some garlic, olive oil and basil, maybe a spoonful of creme fraiche if there's some in the fridge.

The Lazy sod's Spaghetti Tagliatelle

1 half bottle of Campo Viejo Rioja, 2x GIA Sun Dried tomato Puree ,Beef Mince, 2 cloves of garlic and 1 pack of Tagliatelle.

Fry the beef mince up, throw in the tomato puree and Rioja then crush the two cloves into the mix and then let it simmer down. Once the Tagliatelle pasta is done its OM NOM NOM time.

Get a baguette, a short one will do. Cut it in half then cut it in half again long ways. Take two of those halves and put some cheese on there with some lea and perrins on top, some salt too. Grill it until the cheese is nicely melted. Nom.

I often get baguette halves, put some tinned chopped tomato (mixed with tomato paste) grated cheddar and chopped mozzarella (if I have any) on and grill that lot for some five minute pizza thingys. Lovely.

I used to do that but the flavouring is quite strong if you throw it straight into the mince not that it is wrong to do it that way but I prefer to water down by adding it into the sauce but we all have our own ways of cooking :)

Pasta pesto with cheese.

Boil pasta, drain, add a jar of pesto and grate some nice cheese over it, mix well, give it a minute or so to let the residual heat melt the cheese slightly. Nom nom nom.
