I get where you are coming from, of course, but the sheer volume of oil which joins the yolks in a mayonnaise and the amount of parmesan which goes into a carbonara is enough of a difference to make it like comparing apples and oranges.

What do you mean 'dry' pasta? It's cooked, if that's what you mean.

The yolk is to be mixed in before eating. The type of carbonara I happen to be making is an authentic, proper carbonara. I suggest you never order one in Italy or indeed a proper restaurant if you cannot handle it.

I don't think many people wait until the pasta is in the bowl to mix the egg through. Usually one would beat the egg yolk with butter and cheese (and cream if using) and then stir that through the pasta while in the hot pan off the heat.
