This is a pretty simple and straightforward recipe that makes one of the best curries I've ever had. If you're white you might wanna dial back the heat factor to 1/2 or even 1/3. It works with any old cut of meat that lives above sea level. Tastes just as good with cheap cuts of chicken thighs and pork shoulder if you wanna go haram.

More seriously, I think that Jacques Pépin is well worth your time. He was a French chef working at the very highest level, who moved to the US to teach simple, practical cooking.

This will probably sound ridiculous, but watching him fry an egg was a life-changing revelation. We've got a very faddy food culture in this country, but you can get so much mileage out of scaling back your ambitions and just absolutely nailing the fundamentals.
