How does one manage such an amount of money? Surely you can't deposit it, and hiding it under your bed seems like a huge risk.

You can if you do it in 5 grand lumps, 1000 per deposit, into different banks every month. Once it is all in, consolidate. It isn't difficult unless we are talking hundreds of thousands, in which case it is getting rid of it faster than you are earning it.

Be careful where you decide to keep it, though. I would invest in a floor safe.
